Sausage Breakfast Cake Great Aunt Mattie

Ingredients: 1 pound pork sausage ½ cups packed brown sugar ½ cups white sugar 2 large eggs (beaten) 3 cups sifted all-purpose flour 1 tsp baking powder 1 tsp baking soda 1 tsp ground ginger 1 tsp pumpkin pie spice 1 cup cold, strong, brewed coffee 1 cup raisins 1 cup walnuts(chopped) cooking directions: Preheat oven to 350 degrees F (175 degrees C) Grease and flour a 9 inch Bundt pan. Set aside. Pour boiling water over raisins and let stand 5 minutes. Drain well and dry raisins with a cloth towel. In large bowl, combine sausage, brown sugar and white sugar. Stir until mixture is well blended. Add eggs and beat well. In a separate bowl, sift together flour, ginger, baking powder and pumpkin pie spice. Stir baking soda into coffee. Add flour mixture and coffee alternately to sausage mixture, beating well after each addition. Fold raisins and walnuts into cake batter. Pour batter into greased and floured 9 inch Bundt pan. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours or until toothpick inserted into cake comes out clean. Cool in pan 15 minutes, then turn out onto wire rack. Serve warm or room temp. Freezes well in individual slices. My great Aunt used to leave this out on the table all day and folks ate on it till it was gone.

Chicken Bone Broth / Stock

Chicken Bone Broth / Stock Ingredients: young fryer chicken, not a hen 1 large carrot cut into four sections 2 stalks of celery (cut into large sections) 1 stick of salted butter 2 Tbsp chicken bouillon granules 1 onion (peeled & quartered) Instructions: Boil the chicken with the ingredients above, breast-side down, on a low simmer for 2 hours to flavor the stock. Remove chicken with two large spoons and place on a platter. (Remove from bones after cooling.) Discard bones and fat; strain the broth into a large pot or bowl to remove any floating vegetable pieces and skin. NOTE: When you boil a chicken this long, the broth is “bone broth”. This means that when cooled, it will resemble a gel instead of a liquid. This is because the gelatin in the bone is transferred into the broth. Pour stock into quart mason jars, place lids, and wipe with soapy water. Refrigerate. The chicken and butter fat create a seal on top. With a good airtight seal (from fat), store in the fridge for up to 4 months. Once the seal is broken, use it within 3 days.

Small Batch Cheddar Bay Biscuits

6 biscuits 1 cup self-rising flour 1 or 2 teaspoons sugar 1/2 teaspoon Old Bay Seasoning 1/2 teaspoon baking powder 1/2 teaspoon baking soda 2 teaspoons garlic powder 1/3 cup grated cheddar cheese 3 tablespoons grated salted butter 1/2 cup + 1 tablespoon buttermilk 1/4 cup melted butter with 1 teaspoon garlic powder & parsley flakes to be brushed on top Preheat the oven to 450F. Place parchment paper on a baking pan. In a large bowl add self-rising flour, sugar, Old Bay seasoning, baking powder, baking soda and garlic powder. Give that a good stir. Then add three or four good sprinkles of parsley flakes. Then give it another stir. Add in the cheese and give that a good stir and separate all those little pieces of cheese. Add in the grated butter. Work it in the flour gently but thoroughly. Coat every piece with the flour. Then make a little well in your flour. Pour in the 1/2 cup of buttermilk. Stir the milk in with a dinner fork. This dough should be sticky. These are drop biscuits. Then use an ice cream or cookie scoop, the kind with the leaver. You can also use two spoons. Scop the biscuits out on a baking pan. Pace the pan in the oven at 450° and let it cook for approximately 15 minutes. You have to watch them. And then when they get just the way you like them, crispy brown on the top, you pull them out. Melt about a quarter of a stick of butter and put some garlic powder in and a little of the parsley flakes. Brush the tops of the biscuits with the melted butter while they are hot.

Cinnamon Roll Butter Swim Biscuits

Biscuit Ingredients" yields 9 servings/biscuits 1/3 cup dark brown sugar 1 tablespoon ground cinnamon 1 1/4 cups heavy cream, divided 1/2 cup butter 2 1/2 cups all-purpose flour 3 tablespoons white sugar 1 tablespoon baking powder 3/4 teaspoon kosher salt or 1/2 iodized teaspoon salt 1 cup buttermilk Topping Ingredients: 1 cup confectioners sugar 2 ounces cream cheese, softened Directions Preheat the oven to 425 degrees F (190 degrees C). Stir brown sugar, cinnamon, and 2 tablespoons heavy cream together in a small bowl until smooth and set aside. Place butter in an 8x8-inch baking dish and microwave on high until melted. Whisk flour, sugar, baking powder, and salt together in a bowl. Add 1 cup heavy cream and buttermilk and stir until just blended. Pour half the batter into the buttered dish. Spoon brown sugar mixture randomly over the top of the batter. Use a case/butter knife to slightly swirl the mixture. Top with the remaining batter. Batter will be thick, so gently and quickly spread batter as evenly as possible over cinnamon mixture. Use a knife to "cut" the batter into 9 squares. Bake in the preheated oven until biscuits are evenly browned and cooked through, 25 to 39 minutes. Every oven is different so check center biscuit for doneness. As biscuits bake whisk together confectioner’s sugar, cream cheese and remaining heavy cream until smooth. Spread this mixture evenly over the hot biscuits. Serve warm or at room temperature.
