Fried Apple Pancake
slice one apple/thin and cook on med heat in a 8-9" non stick skillet (or well seasoned cast iron skillet) in 1/2 tbsp butter until it starts to brown (stir frequently) or 5 min. reduce heat to low. in a microwave safe 3 cup bowl add 1/3 cup oats, cover with water by about 1/2" add a pinch salt microwave on high 1 1/2 min. stir in 1/2 tsp cinnamon, 2 heaping tbsp baking mix or pancake mix, 1 heaping tsp sugar (or sugar sub), 1 tbsp maple syrup and 1/3 cup milk. it will be thick but pourable. return skillet to med heat and pour pancake batter over cooked apples. cook till edges start to brown. put a lid on skillet to set the center and turn heat to low. let it sit covered till center is set...touch it with your fingertip to test doneness. flip it onto a plate and enjoy. the apple may get dark but was not burnt.
Chicken Sausage
2 pounds ground chicken
2 tablespoons brown sugar, (optional)
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried sage
1 teaspoon dried marjoram
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon red pepper flakes
directions
Mix the everything into the ground chicken, divide into 12-16 equal portions and form into patties.
Cook the patties in a skillet over medium-high heat until lightly golden brown on both sides and cooked through.
Option: You can either cook the patties right away, store them in the fridge for a day or two before cooking or freeze them to cook later.
Note: These freeze well! Place the uncooked patties on a sheet, freeze and then transfer the frozen patties to a sealed container to store in the freezer.

Garlic Butter n Parm/Ramano cheeses w coarse ground black pepper on french bread loaf (toasted) then topped w Ragu pizza sauce, turkey pepperoni, canned mushrooms, more Ragu, Italian blend cheese, smoked turkey deli slices, canned pineapple rings and more Italian blend cheeses then baked till top cheese starts to brown.

Mamma always said this would bring on Labor in your last month. It worked for me both times, within 24 hrs. Jodi Thompson Rubio and it is delicious.
Creamed Peas & Potatoes
INGREDIENTS:
several small new russet potatoes or small red skin potatoes, cut into bite size pieces, about 6 cups
2 Tbsp butter
2 Tbsp flour
1 c cream
1 c milk
3 c peas, fresh, canned (drained) or frozen
1 1/2 tsp chicken bouillon granules
pepper to taste
DIRECTIONS:
To cook the potatoes you just boil them in water until fork tender.
Meanwhile, prepare a basic white sauce by melting the butter in a 2 qt saucepan. Whisk in the flour and then the cream and milk. Cook over medium heat, whisking until thick and smooth.
With a wooden spoon, stir in the chicken bullion and the peas and cook until heated through.
By this time your potatoes are pretty close to being done, Drain the potatoes and add them to the white sauce. Stir in pepper if desired. Do not overcook. You want the peas to remain crisp and not get soggy like canned peas (used canned peas the last 5 minutes of cooking).
Leftovers get somewhat thick, you may want to add some milk when you reheat this dish.
Tres Leche Cornbread / Supper / Snack/ Breakfast / Lunch
Cornbread made with Corn Meal Mix, eggs, Buttermilk, and Creamed Corn. Served hot, warm, room temp or cold curmbled into cold Half n Half.

WOW! We just broke the turkey wishbone and it broke into 2 even sections with the top flying across the living room into the kitchen. I wonder what that could mean. My Daddy always broke the wishbone from our Thanksgiving Turkey with someone at the dinner. Daddy loved having fun and carving the turkey.
I went on line and looked up the history of wishbones....

The practice dates back to around 800 BCE among the Etruscans of ancient Italy, who believed birds, especially chickens, were oracles. Instant Pot Spaghetti Squash
The first time I used my Instant Potwas 2018. I cooked a whole (intact) Spaghetti Squash.

1 cup of water in the pot
add the trivet
wash and rinse the squash
pierce it several times with a knife (you don't need to pierce it).
Plug in the pot.
place it on its side on the trivet.
Lock the lid on.
Push the steam valve to closed.
Press Manual to high pressure and set time for 15 minutes.
I let the pressure release naturally.
You can also cut it in half first (across or lengthwise) and scrape out the seeds.
Then cook it for 7 minutes.
I served it with Garlic powder and Truffle Butter
Green Ramen Skillet
1 paket of Ramen, Chicken or soy flavor. Cook as directed on packet
frozen edamame
frozen kale
frozen squash
zucchini
onion
frozen celery
slices of jarred jalapeno
cook on med high in a large skillet using 2 tbsp olive oil with a tsp of Paula Deen's house seasoning (black pepper, paprika and salt).
when the onion is soft add the liquid from the cooked Ramen.
then remove from heat stir in one container of guacamole.
then toss in the cooked Ramen.
Toss with tongs to cover the ramen with the sauce.
serve hot.
Graham Cracker Pudding or Eclair Pudding
Graham Cracker Pudding
Ingredients:
1 box graham crackers, plain, honey, cinamon or chocolate(strawberry, butterscotch, coconut, cream cheese,pistacio, any flavor) or vanillia wafers
ginger snaps, butter cookies, biscoff, coconut cookies, lemon cookies, Dutch windmill cookies
2 boxes vanilla pudding (5.1 oz each) or you can make homemade
1 box chocolate pudding (3.9 oz) - optional or you can add another flavor of pudding
1 jar peanut butter (you will not use a whole jar) - you can substitute with biscoff spread, or any nut butter or seed butter or Nutella or just omit it
1 pkg softened Cool Whip (8 oz) or you can make homemade whipped cream
Directions
STEP 1
Prepare puddings according to package instructions and set aside.
STEP 2
Prepare the chocolate pudding and set aside
STEP 3
Next, spread peanut butter on graham crackers. Place the first layer of graham cracker/peanut butter on the
bottom of 9x13 pan (peanut butter side up).
STEP 4
Then spread 1/3 of the vanilla pudding on top of that.
STEP 5
Then spread a layer of Cool Whip on top of vanilla pudding.
STEP 6
Make 3 layers
STEP 7
Layer until there's just enough room to spread chocolate pudding on top as a finish (use chocolate pudding
to top the dessert only).
STEP 8
Crush remaining graham crackers. Sprinkle them over the chocolate pudding for garnish.
STEP 9
Refrigerate 1-2 hrs or until graham crackers are soft.
Garlic Dill Cucumber Salad With Yogurt
Ingredients:
-3 mini cucumbers, sliced in thin rounds
-1 garlic clove, minced
-salt and pepper, to taste
-1 tablespoon extra virgin olive oil
-juice from half lemon
-1 tablespoon dill, finely chopped
-2 tablespoons Greek yoghurt
Instructions:
1. Mix the garlic, salt, pepper, olive oil, lemon juice dill and yoghurt in a medium bowl.
2. Add the sliced cucumbers and gently toss well to coat.
3. Sprinkle with fresh additional dill.
