Whipped Goat Cheese and Fig Dip

Ingredients
4 slices bacon, medium diced
1 1/2 teaspoons packed brown sugar (optional)
12 ounces goat cheese, room temperature
4 ounces cream cheese, room temperature
2 tablespoons extra virgin olive oil
1 teaspoon lemon juice
1/4 teaspoon salt (optional)
1/3 cup fig jam
2 teaspoons balsamic vinegar
Flaky sea salt, for garnish (optional)
Assorted crackers and vegetables, for serving
Instructions
1) Heat oven to 375°F. Line a sheet pan with parchment paper. Toss bacon with brown sugar. Arrange in a single layer on the prepared sheet pan. Bake until crispy, 15 minutes. Transfer to a paper towel-lined plate.
2) In a food processor, combine the goat cheese, cream cheese, olive oil, lemon juice, and salt. Pulse until smooth and well combined. Transfer to 1 quart baking dish.
3) In a small bowl, stir together fig jam and balsamic vinegar. Spread over goat cheese, leaving edges exposed. Bake for 10 to 15 minutes or until warmed through.
4) Top with bacon and garnish with thyme sprigs. Serve with assorted crackers and vegetables.
Recipe Tips
You can save time by preparing the bacon and assembling the dip up to a day in advance.
Simply cover and refrigerate the dip until you’re ready to serve.
If you make the bacon in advance, be sure to store it separately to keep it crisp and prevent sogginess.
Reheat the bacon and place it on top of the dip when it’s ready to come out of the oven, or cook it alongside the dip for a quick, easy finish.
If you’re looking to make this dip vegetarian, simply swap the bacon for 1/3 cup of chopped, candied nuts.
For convenience, you can use store-bought candied mixed nuts, which will add a sweet, crunchy contrast to the creamy goat cheese and fig.
